Zhangjiajie mildewed tofu

The Tujia people of Zhangjiajie like to make mildewed tofu (a kind of fermented bean curd) in the winter and spring seasons when it is easy to store.
To make mildewed tofu, they will first cut the fresh tofu into small squares of two centimeters, and then place each piece of tofu evenly in a wooden barrel. Inside the barrel, they will put a layer of grass followed by a layer of tofu, and so on, and finally cover the top layer with quilts or clothes to keep warm.
They will take out the tofu after it grows white mildew and mix it with salt, chili powder, five spices and pepper powder, and finally soak it in cold boiled water for a while before eating. If it needs to be stored for a long time, they will soak it in alcohol or vegetable oil so that it can be stored for two or three years.
